Grilled Chicken with Creamy Avocado, Roasted Potatoes & Pasta

Ingredients:
For the Chicken:
4 skinless chicken breasts
Salt & black pepper
1 tsp garlic powder
1/2 tsp paprika
1 tbsp olive oil
For the Potatoes:
3 cups baby potatoes, halved
1 tbsp olive oil
Salt, pepper, and rosemary
For the Pasta:
2 cups cooked pasta (penne or rigatoni)
1/2 cup heavy cream
1/4 cup Parmesan cheese
1 tbsp parsley
1 tbsp olive oil
Salt & pepper
For the Avocado Sauce:
2 ripe avocados
Juice of 1 lime
2 tbsp chopped cilantro
1 garlic clove, minced
Salt & pepper
Directions:
Roast Potatoes: Toss halved baby potatoes with olive oil, salt, pepper, and rosemary. Roast at 200°C (400°F) for 25–30 minutes until golden brown.
Grill Chicken: Season chicken with garlic powder, paprika, salt, and pepper. Heat olive oil in a pan and grill the chicken for 5–6 minutes per side until cooked.
Prepare Pasta: Cook pasta as directed. Once done, toss it with olive oil, heavy cream, Parmesan, parsley, salt, and pepper.
Make Avocado Sauce: Blend together avocados, lime juice, cilantro, garlic, salt, and pepper until smooth.
Assemble the Dish: Serve pasta in bowls, top with sliced grilled chicken, roasted potatoes, and a spoonful of creamy avocado sauce. Garnish with fresh parsley or cilantro.
