Garlic Chicken with Broccoli and Spinach Stacked Salad

A healthy and delicious layered salad featuring tender chicken, fresh broccoli, and spinach, all infused with garlic flavor and topped with Parmesan cheese. Perfect as a light lunch or a wholesome dinner side!
Ingredients:
2 cups chicken breast, cubed
1 cup broccoli florets
1 cup spinach leaves
1/4 cup olive oil
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 tbsp garlic, minced
Salt and black pepper, to taste
Instructions:
1. Cook the chicken:
Heat 2 tbsp of olive oil in a skillet over medium heat.
Add cubed chicken, season with salt and pepper, and cook until golden brown and fully cooked, about 7–8 minutes. Remove from skillet and set aside.
2. Prepare the broccoli:
In the same skillet, add broccoli florets with chicken broth.
Cover and steam for 4–5 minutes until tender but still crisp. Drain any extra liquid.
3. Sauté garlic and spinach:
Add the remaining olive oil to the skillet.
Sauté minced garlic for 1 minute until fragrant, then add spinach leaves.
Cook for 2–3 minutes until wilted.
4. Assemble the stacked salad:
On a serving plate, layer the spinach at the bottom.
Add the broccoli on top of the spinach.
Place the cooked chicken cubes as the final layer.
Sprinkle with Parmesan cheese.
5. Serve:
Enjoy warm as a stacked salad, or toss together before serving for a classic salad style.
Optional: Garnish with fresh parsley, lemon zest, or extra Parmesan for more flavor
