Lo Mein with Vegetables
Soft, savory noodles tossed with crisp vegetables in a flavorful sauce — quick, colorful, and perfect for a wholesome meal.
Ingredients (2–3 servings)
200g egg noodles or lo mein noodles
1 medium carrot, julienned
1 cup bok choy or napa cabbage, chopped
1 bell pepper, thinly sliced
3 cloves garlic, minced
1 cup broccoli florets
1 small onion, sliced
2–3 tbsp vegetable oil
2 green onions, sliced (for garnish)
Sesame seeds (optional, for garnish)
Sauce:
3 tbsp soy sauce
1 tbsp oyster sauce (or vegetarian mushroom sauce)
1 tsp sugar
½ tsp chili flakes (optional)
1 tsp sesame oil
Instructions
1. Cook Noodles
Boil noodles according to package instructions until al dente.
Drain and set aside.
2. Stir-Fry Vegetables
Heat oil in a large skillet or wok over medium-high heat.
Sauté garlic and onion for 30 seconds until fragrant.
Add broccoli, carrot, bell pepper, and bok choy. Stir-fry 3–5 minutes until slightly tender but still crisp.
3. Combine Noodles & Sauce
Add cooked noodles to the vegetables.
Pour in soy sauce, oyster sauce, sugar, sesame oil, and chili flakes.
Toss everything together until evenly coated and heated through.
4. Serve
Plate lo mein, garnish with sliced green onions and sesame seeds.
Optional: drizzle extra sesame oil for aroma.
Tips & Variations
Add cooked shrimp, chicken, or beef for a protein boost.
Mix in mushrooms, snow peas, or baby corn for variety.
Adjust chili flakes for a spicier kick.
