The Best Bok Choy Stir-Fried Beef
Ingredients
- 1 lb (450 g) flank steak, thinly sliced against the grain
- 3 cups bok choy, chopped (stems + leaves separated)
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tsp sesame oil
- ½ tsp sugar
- 1 tbsp cornstarch (for velveting beef, optional)
- 2 tbsp neutral oil (for stir-frying)
Instructions
Step 1: Marinate the Beef
- In a bowl, combine sliced flank steak with:
- 1 tbsp light soy sauce
- ½ tbsp oyster sauce
- ½ tsp sugar
- 1 tsp sesame oil
- 1 tbsp cornstarch (optional, for tenderness)
- Toss well and let sit for 15–20 minutes while prepping vegetables.
Step 2: Cook the Beef
- Heat 1 tbsp oil in a large wok or skillet over high heat.
- Add beef in a single layer, sear for 1–2 minutes (don’t overcrowd).
- Stir-fry until about 80% cooked, then transfer to a plate.
Step 3: Stir-Fry Bok Choy
- Add 1 tbsp oil to the same wok.
- Toss in garlic and ginger, stir-fry 20–30 seconds until fragrant.
- Add bok choy stems first (they take longer to soften). Stir-fry 2 minutes.
- Add bok choy leaves, cook 1 more minute until wilted.
Step 4: Combine
- Return beef to wok.
- Add remaining 1 tbsp light soy sauce + ½ tbsp dark soy sauce + ½ tbsp oyster sauce.
- Stir-fry everything together for 1–2 minutes until beef is fully cooked and coated in sauce.
- Drizzle with a little more sesame oil before serving.
