Roasted Salmon Glow Bowl with Green Goddess Drizzle

 

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
For the Bowl:
1 salmon fillet (4–6 oz)
1 cup romaine or mixed greens
½ cup roasted cauliflower florets
½ cup roasted sweet potato chunks
½ cup sautéed or roasted broccolini or broccoli
1 tbsp olive oil
Salt & pepper to taste
Fresh parsley for garnish
For the Green Goddess Dressing:
¼ cup plain Greek yogurt or vegan yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 garlic clove
1 tbsp chopped fresh parsley
1 tbsp chopped fresh basil or cilantro
Salt to taste
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
Roast the Veggies:
Preheat oven to 200°C (400°F). Toss cauliflower and sweet potato with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crisp at the edges.
Cook the Salmon:
Season salmon with salt and pepper. Pan-sear skin-side down for 4–5 minutes, then flip and cook 2–3 minutes more, or roast in the oven at 200°C for 12–15 minutes until flaky.
Make the Dressing:
Blend all dressing ingredients until smooth. Adjust salt and lemon to taste.
Assemble the Bowl:
Layer greens in the bottom of the bowl. Add roasted veggies, broccolini, and salmon on top. Drizzle with green goddess dressing.
Garnish & Serve:
Top with fresh parsley and a final drizzle of dressing. Serve warm or chilled.
