Grilled Chicken Mediterranean Bowl with Tzatziki
A fresh and protein-packed Mediterranean-inspired bowl with creamy tzatziki!
Ingredients:
For the Chicken & Veggies:
1 boneless, skinless chicken breast
½ red bell pepper, chopped
1 tbsp olive oil
½ tsp garlic powder
½ tsp oregano
½ tsp salt
¼ tsp black pepper
For the Mediterranean Salad:
½ cup cherry tomatoes, halved
½ cup cucumber, chopped
¼ small red onion, finely diced
1 tbsp fresh parsley, chopped
1 tbsp crumbled feta cheese
½ tbsp olive oil
½ tbsp lemon juice
Salt & black pepper (to taste)
For the Tzatziki Sauce:
¼ cup Greek yogurt
1 tbsp cucumber, grated
½ tsp lemon juice
¼ tsp garlic powder
¼ tsp dried dill
Salt & black pepper (to taste)
Step by Step:
Cook the Chicken & Peppers:
Heat a grill pan or skillet over medium heat.
Rub chicken breast and chopped red bell pepper with olive oil, garlic powder, oregano, salt, and black pepper.
Cook chicken for 5-6 minutes per side until fully cooked.
Sauté or grill the red bell peppers until slightly charred.
Prepare the Mediterranean Salad:
In a bowl, mix cherry tomatoes, cucumber, red onion, parsley, and feta.
Drizzle with olive oil and lemon juice.
Season with salt and black pepper.
Make the Tzatziki Sauce:
In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, garlic powder, dried dill, salt, and black pepper.
Assemble the Bowl:
Slice the grilled chicken and place it in a bowl.
Add the Mediterranean salad and grilled red peppers.
Top with a generous drizzle of tzatziki sauce.
