Healthy, no-bake energy bar, practical, delicious and perfect for everyday use!

Hungry but don’t want to break your diet? Try these delicious energy bars made with nuts, seeds, and dark chocolate. 

They are practical, nutritious and ideal for taking on hikes or even in children’s lunchboxes.

Unlike energy cookies that go in the oven, these bars are made in the refrigerator – easy, quick, and no baking required. 

The dark chocolate coating gives a special touch and even more energy to the bars (if you prefer, you can use milk or white chocolate).

Ingredients:

    • ½ cup rolled oats
    • 100 g dried apricots
    • 3 tablespoons of sunflower seeds
    • 3 tablespoons of cashew nuts
    • 3 tablespoons of peanuts
    • 2 tablespoons of pumpkin seeds
  • 2 tablespoons sesame seeds
  • ½ cup chopped walnuts
  • Cinnamon and ginger to taste

For the topping:

  • 50g dark or semi-sweet chocolate
  • Chopped pumpkin seeds (for garnish)

Preparation method:

In a skillet, lightly toast the rolled oats with the sunflower seeds. Be careful not to burn them. Transfer to a bowl.

Add the cashews, peanuts, pumpkin seeds, sesame seeds, chopped walnuts, cinnamon, and ginger to the bowl. Mix well.

Place this mixture in a blender or food processor and blend until you get a slightly fine/grainy texture.

Place the dough into cheese bread or cupcake molds, filling them halfway and pressing down firmly with a spoon to compact them.

Melt the chocolate in a double boiler or in the microwave and spread it over the mixture.

Decorate with chopped pumpkin seeds and refrigerate for 1 hour. After that, unmold.

Tip:

If you don’t have molds, you can use a square or round baking dish. After setting in the refrigerator, cut into bars in your preferred shape—square or rectangular.
