Ingredients:
- 1 cup of water
- 1/2 cup oatmeal
- 1 pinch of salt
Filling (optional):
- 2 beaten eggs
- Tomato slices (to taste)
- Shredded and seasoned chicken (to taste)
Preparation method:
Blend the three initial ingredients (water, oat flour and salt) in a blender or with a mixer until you get a smooth dough.
Heat a frying pan over low or medium heat and brush with a little olive oil, spreading it evenly.
Pour a portion of the batter into the skillet and cook until firm. Once it’s firm, flip the pancake to brown the other side.
This recipe makes approximately two to three pancakes, depending on the thickness.
For the filling, use the same skillet. Add a drizzle of olive oil (always over low heat), add a few tomato slices, and the beaten eggs with a pinch of salt. Let the eggs begin to cook.
Then add the shredded chicken over the eggs and, on top, the ready-made oatmeal pancake.
Let it cook for a few more minutes, carefully flip it over and let it brown on the other side as well.
And that’s it! Our delicious recipe is finished.
Look how it turned out! I’ll even cut it open so you can see—it was incredible, super tasty, and very practical.
You can adapt this recipe however you like: replace the tomato with zucchini, the chicken with cheese, ham, mozzarella… Get creative!
