Now, I want to teach you how to prepare a healthy, practical and delicious zucchini and egg recipe.
It is ideal for those following a low-carb diet or for those with diabetes, as it is light, does not cause weight gain and does not alter blood sugar levels.
Ingredients:
- 1 zucchini
- 2 eggs
- 1 tablespoon of wheat flour
- Salt and black pepper to taste (you can also use other seasonings of your choice)
- Sliced ham (or turkey breast)
- Chopped green onions to taste
- Sliced cheese (mozzarella or other cheese of your choice)
Preparation method:
Grate the zucchini and place it in a bowl. Add a pinch of salt and let it sit for 5 minutes.Â
Then squeeze the zucchini in a strainer to remove excess liquid.
In another bowl, beat the eggs with salt and pepper (and your favorite seasonings) until smooth. Add the flour and mix well until combined.
Add the grated zucchini to the egg mixture and stir to combine all the ingredients.
Grease a frying pan with oil and spread half of the zucchini and egg mixture, leveling it well to make it uniform.
Spread some slices of ham (or turkey breast), sprinkle chopped green onions and add slices of mozzarella cheese (or your preferred cheese).
Cover with the remaining dough, spreading it out again to make everything even.
Fry over medium heat until golden brown on the underside. Carefully flip and brown the other side.
Serve immediately!
