Ingredients:

    • 1 cup chopped dates
    • ½ cup hot water
    • ¾ teaspoon baking soda
    • 4 tablespoons of butter 
    • ½ cup brown sugar
  • 3 eggs 
  • 200 g wheat flour
  • 1 teaspoon baking powder for cake (Royal type)
  • ½ cup chopped walnuts
  • 1 teaspoon vanilla essence
  • ½ teaspoon almond essence (optional)

For the caramel:

    • 7 tablespoons of butter
  • ½ cup brown sugar 
  • 200 ml of cream

Preparation method:

Place the dates in a bowl, add the hot water and baking soda. Mix until well combined. Set aside.

In a separate bowl, add the softened butter and brown sugar. Beat for 2 to 3 minutes with an electric mixer. Then, add the eggs and beat for 1 minute.

Sift the flour and baking powder directly into the mixture. Mix gently, then add the vanilla extract, almond extract, date mixture, and chopped walnuts. Mix until well combined.

Line a pan with parchment paper and pour in the mixture. Bake at 170°C for about 30 to 35 minutes.

Meanwhile, prepare the caramel sauce.

In a microwave-safe bowl, add the butter and brown sugar. Heat for 45 seconds. Mix well, then add the heavy cream. Stir until well combined.

When the cake is ready and still warm, poke holes in it with a fork and pour over the caramel sauce. Let it sit for 1 to 2 minutes.
