Ingredients for the ‘dough’:

- 2 cups of washed rice
- 3 eggs
- 5 tablespoons melted butter/margarine
- 1 teaspoon of salt
- 4 cups of hot water
Ingredients for the filling:
- 400 g ground beef
- 1 chopped onion
- Salt to taste
- Black pepper to taste
- Seasoning for meat to taste
Ingredients for breading:
- 3 eggs
- 2 tablespoons of cornstarch (Maizena)
- Breadcrumbs
- Frying oil
Preparation method:
Place the washed rice in a pan, add hot water, salt, cover and cook over low heat.
After cooking, transfer to a bowl (or basin) and let it cool a little.
Meanwhile, heat two tablespoons of oil in a frying pan, add the chopped onion and sauté until wilted and translucent.
Add the ground beef and season with salt, black pepper, and meat seasoning to taste.
Cook over medium heat, stirring constantly to prevent sticking or burning to the bottom of the pan.
Over the cooked rice, place the melted butter and eggs and three eggs.
Mix well until everything is well incorporated.
Line a dessert container (or small bowl) with plastic wrap and distribute the rice evenly, following the shape of the container.
Fill with one to two tablespoons of ground beef, wrap well, and shape into a dumpling or similar to a coxinha.

Tip:Â You can simplify things by placing the rice on top of a piece of plastic wrap, filling it and closing it, shaping it into a ball.
In a bowl, beat 3 eggs and mix with the cornstarch until there are no lumps.
Dip the rice ball in the egg and cornstarch mixture, then roll the ball in breadcrumbs.
Fry in hot oil until golden, as if you were frying a coxinha.
Remove the fried balls and place them on a plate lined with paper towels to drain the excess oil.
