- 2Â eggplants
- 300g of minced meat
- 1Â onion
- 2Â cloves of garlic
- 150g of crushed tomatoes
- 100g of grated cheese
- 2 tablespoons of olive oil
- salt to taste
- pepper to taste
- 1 teaspoon of sweet paprika
- Cut the eggplants in half and remove some of the pulp.
- Chop the onion and garlic and sauté them in a pan with olive oil.
- Add the ground meat and cook until browned.
- Add the crushed tomatoes, eggplant pulp, salt, pepper, and paprika. Cook for 10 minutes.
- Fill the eggplant halves with the meat mixture.
- Sprinkle the grated cheese on top.
- Bake at 180°C for 25 minutes.

- You can add herbs like oregano or basil for more flavor.
