In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add taco seasoning and water. Simmer 5 minutes until thickened.
Prepare Beans:
In a small saucepan, warm refried beans with ¼ cup water, stirring until smooth and spreadable.
Crisp Tortillas:
Fried method: Heat 2–3 tablespoon oil in a skillet. Fry tortillas one at a time until golden and crisp, about 1–2 minutes per side. Drain on paper towels.
Healthier method: Brush or spray tortillas lightly with oil. Bake at 400°F (200°C) for 5–7 minutes per side until crisp.
Assemble Pizzas:
Place one tortilla on a baking sheet. Spread a layer of beans, then a layer of seasoned meat.
Top with another tortilla. Spread a spoonful of enchilada/taco sauce over the top. Sprinkle with cheese, then add diced tomatoes, green onions, and olives.
Bake:
Bake pizzas at 400°F (200°C) for 8–10 minutes, until cheese is melted and bubbly.
Serve:
Slice into quarters like a pizza and serve hot with extra taco sauce or sour cream if desired.
