Oven Roasted Smoked Sausage and Potatoes

 

 

Ingredients

Main

  • 1 lb 450g smoked sausage, sliced into rounds
  • 1.5 lb 680g potatoes, cut into 1-inch cubes (Yukon Gold or red potatoes work best)
  • 1 bell pepper sliced
  • 1 small onion sliced

Seasoning & Oil

  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp dried thyme or Italian seasoning
  • ¾ tsp salt adjust to taste
  • ½ tsp black pepper
  • ½ tsp red pepper flakes optional for heat

Instructions

  • Preheat the Oven
  • Set oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.
  • Prep the Ingredients
  • Slice the sausage into rounds.
  • Cube the potatoes evenly.
  • Slice the pepper and onion.
  • Season Everything
  • Add sausage, potatoes, and vegetables to a large bowl.
  • Drizzle with olive oil.
  • Sprinkle in garlic powder, paprika, onion powder, thyme, salt, pepper, and optional red pepper flakes.
  • Toss well to coat evenly.
  • Roast
  • Spread mixture in a single layer on the baking sheet.
  • Roast for 20 minutes, then stir or flip pieces.
  • Return to oven and roast 15–20 minutes more until potatoes are tender and edges are golden.
  • Serve
  • Let rest for 5 minutes, then serve warm.
  • Optional garnish: chopped parsley or grated Parmesan.
