Preheat the Oven
Set oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.
Prep the Ingredients
Slice the sausage into rounds.
Cube the potatoes evenly.
Slice the pepper and onion.
Season Everything
Add sausage, potatoes, and vegetables to a large bowl.
Drizzle with olive oil.
Sprinkle in garlic powder, paprika, onion powder, thyme, salt, pepper, and optional red pepper flakes.
Toss well to coat evenly.
Roast
Spread mixture in a single layer on the baking sheet.
Roast for 20 minutes, then stir or flip pieces.
Return to oven and roast 15–20 minutes more until potatoes are tender and edges are golden.
Serve
Let rest for 5 minutes, then serve warm.
Optional garnish: chopped parsley or grated Parmesan.
