Mushrooms with Garlic – Tastier than Meat!

Preparation
- In a large pot, bring salted water to a boil and add the diced potatoes. Cook them until they’re just tender, then drain well.
- Heat some olive oil in a large pan over medium-high heat. Add the cooked potatoes and fry until they’re golden and crisp. Once done, remove them from the pan and set them aside.
- In the same pan, add butter. Once melted, throw in the mushrooms. Fry them until they’re browned and their moisture has evaporated.
- Add the sliced onions to the pan and cook until they’re soft and caramelized, stirring occasionally.
- Toss in the minced garlic and keep stirring until fragrant, which will only take about a minute.
- Return the crispy potatoes to the pan. Season with salt and your choice of potato seasoning, then toss everything together so that it’s well coated.
- Cook for another few minutes until everything is hot and combined.
- Remove from heat and sprinkle with fresh parsley and dill before serving.
Notes
Storage: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet for the best texture. Flavor Variations: Add in some bell peppers or spinach for extra veggies. A splash of lemon juice can brighten up the flavors wonderfully!
