Slow Cooker Pepper Steak
Ingredients
- Sirloin steak, cut into strips – 2 lb (900 g)
- Minced garlic – 2 tsp (about 6 g)
- Olive oil – 2 Tbsp (30 ml)
- Hot water – 2/3 cup (160 ml)
- Beef bouillon cube – 1
- Cornstarch – 1 Tbsp (8 g)
- Chopped onion – 1 cup (150 g)
- Soy sauce – 3 Tbsp (45 ml)
- Brown sugar – 1 tsp (4 g)
- Diced tomatoes – 1 can (14–15 oz / 400 g)
- Worcestershire sauce – 2 tsp (10 ml)
- Black pepper – to taste
- Bell peppers, sliced (any color) – 2 medium (about 300 g)
Instructions
Step 1: Brown the Steak
Heat the olive oil in a large skillet over medium-high heat. Add the sirloin steak strips and minced garlic. Sauté for a few minutes until the steak is browned on the outside. Remove from heat.
Step 2: Prepare the Thickener
Dissolve the beef bouillon cube in the hot water. Whisk in the cornstarch until completely smooth, then pour this mixture into the slow cooker.
Step 3: Add Sauce Ingredients
To the slow cooker, add the soy sauce, brown sugar, Worcestershire sauce, diced tomatoes, and black pepper. Stir well to combine.
Step 4: Combine and Cook (Phase 1)
Add the chopped onion and the browned steak to the slow cooker. Mix until everything is evenly coated with the sauce.
Cook on HIGH for 3 hours or LOW for 6–7 hours.
Step 5: Add Peppers and Finish Cooking (Phase 2)
Add the sliced bell peppers to the slow cooker. Continue cooking for 1 more hour on the same heat setting, until the peppers are tender but still slightly crisp.
