Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, chopped walnuts, chopped dates, and sea salt.
- In another bowl, whisk together the egg, almond butter, vanilla extract, and cinnamon until smooth.
- Pour the wet mixture into the dry mix and stir until everything is well combined.
- Drop tablespoon-sized amounts of dough onto a lined baking sheet, leaving some space in between each.
Baking
- Bake for 10-12 minutes, or until the edges turn golden brown.
- Let them cool before enjoying your tasty breakfast cookies.
Notes
Store cookies in an airtight container at room temperature for up to a week, or refrigerate for longer freshness. Add dark chocolate chips or dried cranberries for variations. For nut allergies, substitute almond butter with sunflower seed butter.
