Preparation
- Preheat your oven to 350°F (or 320°F for a fan oven).
- Spray a loaf pan with cooking oil or coat it with butter to prevent sticking.
- In a large bowl, mash the ripe bananas. Add the crunchy peanut butter, vanilla extract, and eggs. Mix until smooth.
- Stir in the baking powder.
- Gently fold the fresh blueberries into the batter.
- Pour the mixture into the prepared loaf pan and top with a handful of extra blueberries.
Baking
- Bake in the preheated oven for 50-55 minutes. Cover with aluminum foil if the top starts to brown too quickly.
- Check for doneness with a toothpick; if it comes out clean, the bread is ready.
- Let it cool in the pan before transferring it to a wire rack.
Notes
Serve warm or at room temperature; delicious with butter or yogurt. Great paired with tea or coffee. For longer storage, slice and freeze individual pieces.
