Ingredients

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 2 cups all-purpose flour (250 grams)
  • 1/2 cup sugar (100 grams)
  • 1/2 cup milk (120 ml)
  • 1/4 cup vegetable oil (60 ml)
  • 2 eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with a bit of oil or cooking spray.
  2. In a large bowl, combine the mashed sweet potatoes, sugar, milk, vegetable oil, and eggs. Mix until everything is smooth and well combined.
  3. In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
  4. Gradually fold the dry ingredients into the sweet potato mixture until just combined. Be careful not to overmix.
  5. Pour the batter into your prepared loaf pan, spreading it evenly.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool for a few minutes in the pan, then transfer it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week. Feel free to add mix-ins like chopped nuts, dried fruits, or chocolate chips for extra flavor. For muffins, pour batter into muffin tins and adjust baking time to 20-25 minutes.
