- Preheat your oven to 350°F (175°C). Grease a loaf pan with a bit of oil or cooking spray.
- In a large bowl, combine the mashed sweet potatoes, sugar, milk, vegetable oil, and eggs. Mix until everything is smooth and well combined.
- In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the sweet potato mixture until just combined. Be careful not to overmix.
- Pour the batter into your prepared loaf pan, spreading it evenly.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool for a few minutes in the pan, then transfer it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week. Feel free to add mix-ins like chopped nuts, dried fruits, or chocolate chips for extra flavor. For muffins, pour batter into muffin tins and adjust baking time to 20-25 minutes.
