Sugar-Free Almond Rocks with Dark Chocolate

Preparation
- Preheat your oven to 170°C (340°F).
- Place the slivered almonds in a mixing bowl. Add one egg white and stir until the almonds are evenly coated. If the mixture isn’t sticking together, add a second egg white.
- Using two spoons, scoop out small mounds of the almond mixture and place them on a baking sheet, leaving space between each mound.
Baking
- Bake in the preheated oven for about 15 minutes, or until they turn golden on both the top and bottom.
- Once done, let them cool slightly on the baking sheet.
Chocolate Dipping
- While your almond rocks cool, melt the sugar-free dark chocolate using a microwave or double boiler until it’s smooth.
- Dip the bottom of each almond cookie into the melted dark chocolate and then place them on parchment paper.
Setting and Serving
- Allow the chocolate to set at room temperature or refrigerate for about 5 minutes until the chocolate is firm before serving.
Notes
Store your almond rocks in an airtight container at room temperature to keep them crunchy. Consider adding a pinch of sea salt to the chocolate for a sweet-and-salty twist. Drizzle extra melted chocolate on top for a decorative touch.
