Sugar-Free Almond Rocks with Dark Chocolate

 

Ingredients

Main ingredients
  • 125 g slivered almonds
  • 1–2 pieces egg whites Adjust depending on the mixture consistency
  • 80 g sugar-free dark chocolate For melting and dipping

Method

Preparation
  1. Preheat your oven to 170°C (340°F).
  2. Place the slivered almonds in a mixing bowl. Add one egg white and stir until the almonds are evenly coated. If the mixture isn’t sticking together, add a second egg white.
  3. Using two spoons, scoop out small mounds of the almond mixture and place them on a baking sheet, leaving space between each mound.
Baking
  1. Bake in the preheated oven for about 15 minutes, or until they turn golden on both the top and bottom.
  2. Once done, let them cool slightly on the baking sheet.
Chocolate Dipping
  1. While your almond rocks cool, melt the sugar-free dark chocolate using a microwave or double boiler until it’s smooth.
  2. Dip the bottom of each almond cookie into the melted dark chocolate and then place them on parchment paper.
Setting and Serving
  1. Allow the chocolate to set at room temperature or refrigerate for about 5 minutes until the chocolate is firm before serving.

Notes

Store your almond rocks in an airtight container at room temperature to keep them crunchy. Consider adding a pinch of sea salt to the chocolate for a sweet-and-salty twist. Drizzle extra melted chocolate on top for a decorative touch.
