This cheese is light, has no artificial additives and can be customized with your favorite seasonings.

Ingredients:

  • 2 liters of milk
  • 10 tablespoons of white vinegar or juice of 2 lemons
  • Salt to taste
  • (Optional) Fine herbs and olive oil for flavoring

Preparation method:

Pour the milk into a saucepan and heat over medium heat. As soon as it starts to foam and almost boil, turn off the heat immediately.

With the milk still very hot, add the vinegar (or lemon juice) and stir well until you notice the separation of the whey and the dough.

Cover with a clean cloth and let it rest for about 45 minutes. This time is essential for the mixture to completely coagulate and cool.

After resting, add salt to taste. If you want to give it a special touch, add dried herbs and a little olive oil. Mix well so that the seasoning is distributed throughout the dough.

Use a fine sieve, a clean cloth or even a coffee strainer (without previous use) to filter the solid part. Reserve the whey, which can be used in other recipes.

Transfer the dough to a container or mold and press down firmly, with your hands or a weight, to remove excess liquid and shape the cheese.

Cover and refrigerate for about 12 hours. This time allows the cheese to firm up and acquire a more consistent texture.

Once chilled, unmold and cut. The cheese will be ready to be eaten on its own, with bread, toast or even with jam.
