Moist Chocolate Loaf Cake

 

Ingredients

Dry Ingredients
  • 1 cup all-purpose flour (120g)
  • 1/2 cup unsweetened cocoa powder (50g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened (115g)
  • 3/4 cup granulated sugar (150g)
  • 1/2 cup packed brown sugar (100g)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk (or regular milk with 1 tsp vinegar or lemon juice)
  • 1/2 cup hot water or brewed coffee (120ml)
  • 1/2 cup semi-sweet chocolate chips (optional)

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easy removal.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set this mixture aside.
Mixing
  1. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy.
  2. Mix in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract.
  3. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix just until combined.
  4. Slowly pour in the hot water or coffee while mixing on low speed. The batter will be thin but smooth and glossy.
  5. Gently fold in the chocolate chips if desired.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For the best presentation, slice the cake into thick pieces. It can be served plain, dusted with powdered sugar, or with a dollop of whipped cream. Adding berries or a scoop of vanilla ice cream enhances the experience.
