80 g (2.8 oz) dark chocolate, chopped or in chips

Prep the Base Mixture In a large bowl, mash the banana until smooth. Add the oat flour, rolled oats, puffed rice, raisins, chopped apricots, and walnuts. Mix until well combined. Add honey or maple syrup if you want a sweeter flavor. Sprinkle in the cinnamon and a pinch of salt.
Press and Bake Line a small baking tray or dish with parchment paper (approx. 8×8 inches). Transfer the mixture to the tray and press it down evenly to form a compact layer. Bake in a preheated oven at 360°F (180°C) for 10-12 minutes just to set and slightly toast the oats and nuts.
Add the Chocolate Topping While the bars are cooling, melt the dark chocolate in a heatproof bowl over simmering water or microwave in 20 second bursts until smooth. Pour the melted chocolate over the baked fruit nut mixture and spread evenly with a spatula.
Chill and Slice Refrigerate for at least 1 hour, or until the chocolate is fully set. Lift the mixture out of the tray using the parchment and cut into bars or squares.
