  • ½ cup crumbled feta cheese

  • ¼ cup grated Parmesan cheese

  • Fresh basil leaves for garnish

  1. Prepare the Eggplant
    Slice the eggplants and sprinkle both sides with salt. Lay them on paper towels and let sit for 20–30 minutes to draw out excess moisture and bitterness.
