Mediterranean Chickpea Salad

🥣 Ingredients (Serves 2–3)

  • 1 can (400 g) chickpeas, drained and rinsed

  • 1 large tomato, diced

  • ½ cucumber, diced

  • ¼ red onion, finely sliced

  • ½ red bell pepper, diced

  • 10–12 pitted olives (black or green), halved

  • ¼ cup crumbled feta cheese (optional)

  • 2 tbsp chopped parsley or coriander

  • 1 tbsp extra virgin olive oil

  • Juice of ½ lemon

  • 1 tsp dried oregano

  • Salt & freshly ground black pepper to taste

Step 1: Prep the Ingredients

  • Drain and rinse the chickpeas.

  • Dice tomato, cucumber, and bell pepper; thinly slice red onion.

  • Chop parsley or coriander.

Step 2: Make the Dressing

  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.

Step 3: Combine

  • In a large bowl, combine chickpeas, veggies, and olives.

  • Pour dressing over the top and toss gently to mix.

  • Add feta cheese if using.

Step 4: Serve

  • Serve immediately or chill for 20–30 minutes for a deeper flavor.
