Mediterranean Chickpea Salad

🥣 Ingredients (Serves 2–3)
1 can (400 g) chickpeas, drained and rinsed
1 large tomato, diced
½ cucumber, diced
¼ red onion, finely sliced
½ red bell pepper, diced
10–12 pitted olives (black or green), halved
¼ cup crumbled feta cheese (optional)
2 tbsp chopped parsley or coriander
1 tbsp extra virgin olive oil
Juice of ½ lemon
1 tsp dried oregano
Salt & freshly ground black pepper to taste

Step 1: Prep the Ingredients
Drain and rinse the chickpeas.
Dice tomato, cucumber, and bell pepper; thinly slice red onion.
Chop parsley or coriander.
Step 2: Make the Dressing
In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
Step 3: Combine
In a large bowl, combine chickpeas, veggies, and olives.
Pour dressing over the top and toss gently to mix.
Add feta cheese if using.
Step 4: Serve
Serve immediately or chill for 20–30 minutes for a deeper flavor.
Garnish with a drizzle of olive oil and extra herbs before serving.
