Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 medium zucchini, sliced into rounds
1 tablespoon butter
Fresh parsley, chopped, for garnish
Instructions:
Prepare the chicken: In a shallow dish, combine olive oil, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and turn to coat evenly.
Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until cooked through. 1 Remove the chicken from the skillet and set aside.
Cook the zucchini: Add the butter to the skillet and melt over medium heat. Add the zucchini slices and cook for 5-7 minutes, or until tender-crisp.
