Quick Mediterranean Mini Chicken Pot Pies (Simple Version)

1 cup cooked chicken (shredded or chopped)
¼ cup crumbled feta cheese
¼ cup chopped sun-dried tomatoes
¼ cup chopped olives (optional)
¼ cup plain Greek yogurt or cream cheese
1 tsp dried oregano or Italian seasoning
1 sheet puff pastry (or 1 can biscuit dough)

1. Preheat oven to 375°F (190°C). Grease a muffin tin.
2. Mix filling:
In a bowl, mix chicken, feta, sun-dried tomatoes, olives (if using), yogurt, and oregano.
3. Shape dough:
Cut puff pastry into 6 squares (or flatten biscuit dough). Press into muffin tin cups.
4. Fill:
Spoon the filling into each dough cup.
5. Fold & bake:
Fold corners of dough over filling. Bake for 20–25 minutes, until golden.
6. Serve warm!
