For the Salad
1 can (400g) chickpeas, rinsed & drained
1 cup cherry tomatoes, halved
1 small cucumber, diced
1/2 red onion, finely chopped
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/4 cup black olives or Kalamata olives, sliced
1/4 cup crumbled feta cheese
2โ3 tbsp fresh parsley, chopped
Optional: fresh mint or basil for extra freshness
For the Dressing
3 tbsp extra-virgin olive oil
2 tbsp lemon juice
1 clove garlic, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Optional: 1 tsp honey for balance

1. Prep the Vegetables
Chop cucumber, tomatoes, peppers, onion, olives, and parsley.
Add all chopped ingredients to a large mixing bowl.
Add rinsed & drained chickpeas.
2. Make the Dressing
Whisk together:
olive oil
lemon juice
minced garlic
oregano
salt & pepper
(optional honey)
Taste and adjust acidity or salt as needed.
3. Combine Everything
Pour dressing over the salad.
Toss gently until all ingredients are coated evenly.
Add feta cheese last and fold it in lightly.
4. Chill & Serve
Let it sit for 10โ15 minutes to absorb flavors.
Serve chilled or at room temperature.
