🧾 Ingredients (Serves 4)

For the Salad

  • 1 can (400g) chickpeas, rinsed & drained

  • 1 cup cherry tomatoes, halved

  • 1 small cucumber, diced

  • 1/2 red onion, finely chopped

  • 1/2 red bell pepper, diced

  • 1/2 yellow bell pepper, diced

  • 1/4 cup black olives or Kalamata olives, sliced

  • 1/4 cup crumbled feta cheese

  • 2–3 tbsp fresh parsley, chopped

  • Optional: fresh mint or basil for extra freshness


For the Dressing

  • 3 tbsp extra-virgin olive oil

  • 2 tbsp lemon juice

  • 1 clove garlic, minced

  • 1 tsp dried oregano

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Optional: 1 tsp honey for balance


👨‍🍳 Step-by-Step Instructions

1. Prep the Vegetables

  • Chop cucumber, tomatoes, peppers, onion, olives, and parsley.

  • Add all chopped ingredients to a large mixing bowl.

  • Add rinsed & drained chickpeas.


2. Make the Dressing

Whisk together:

  • olive oil

  • lemon juice

  • minced garlic

  • oregano

  • salt & pepper

  • (optional honey)

Taste and adjust acidity or salt as needed.


3. Combine Everything

  • Pour dressing over the salad.

  • Toss gently until all ingredients are coated evenly.

  • Add feta cheese last and fold it in lightly.


4. Chill & Serve

  • Let it sit for 10–15 minutes to absorb flavors.

  • Serve chilled or at room temperature.
