For the Dressing

3 tbsp extra-virgin olive oil

2 tbsp lemon juice

1 clove garlic, minced

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

Optional: 1 tsp honey for balance

1. Prep the Vegetables

Chop cucumber, tomatoes, peppers, onion, olives, and parsley.
