🥘 Ingredients (Serves 3–4)
Main Stew
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon ground coriander
1 can (400 g) chickpeas, drained & rinsed
2 cups fresh spinach (or 1 cup frozen)
1 cup crushed tomatoes
½ cup vegetable broth (or water)
Salt & black pepper to taste
Finishing
1 tablespoon lemon juice
1 tablespoon chopped parsley
Optional: a pinch of chili flakes
👩🍳 Instructions
Sauté the aromatics
Heat olive oil in a pot over medium heat. Add chopped onion and cook for 4 minutes. Add minced garlic and cook another minute.Add spices
Stir in cumin, paprika, coriander, salt, and black pepper. Let them bloom for 30 seconds for deeper flavor.Add chickpeas & tomatoes
Mix in the chickpeas and stir to coat them in the spices. Pour in crushed tomatoes and vegetable broth.
Simmer for 10 minutes.Add spinach
Stir in spinach and cook until wilted (2–3 minutes). If using frozen spinach, cook for 5 minutes.Finish with lemon
Turn off the heat and stir in lemon juice for brightness.Garnish & serve
Add chopped parsley + chili flakes (optional). Serve warm.
