🥗 Fattoush (Crispy Levantine Bread Salad)

 

 


🥬 Ingredients (Serves 4–5)

Salad:

  • 2 cups romaine lettuce, chopped

  • 2 medium tomatoes, diced

  • 1 large cucumber, diced

  • 1 small red onion or 2 spring onions, sliced

  • ½ cup fresh parsley, chopped

  • ¼ cup fresh mint, chopped

  • 1 small green bell pepper, diced (optional)

  • 1–2 radishes, thinly sliced

  • 2 toasted or fried pita breads, broken into pieces

Dressing:

  • 3 Tbsp olive oil

  • 2 Tbsp lemon juice

  • 1 Tbsp pomegranate molasses (gives authentic sweetness)

  • 1–2 tsp sumac (signature fattoush flavor)

  • 1 tsp vinegar

  • 1 small garlic clove, minced

  • ½ tsp salt

  • ¼ tsp black pepper


👩‍🍳 Instructions

Step 1 — Prepare the Pita

You can choose any of these:

  • Toast in oven at 200°C (400°F) until golden

  • Pan fry with a little oil

  • Air fry until crispy
    Break into bite-sized pieces.


Step 2 — Chop the Vegetables

Add to a large bowl:

  • Lettuce

  • Tomatoes

  • Cucumbers

  • Onion

  • Parsley & mint

  • Radishes

  • Bell pepper


Step 3 — Make the Dressing

Whisk together:

  • Olive oil

  • Lemon juice

  • Pomegranate molasses

  • Sumac

  • Vinegar

  • Garlic

  • Salt & pepper

Taste and adjust — fattoush dressing is tangy & bold.


Step 4 — Assemble

  • Add pita bread pieces to the salad.

  • Pour dressing and toss well.

Serve immediately so the pita stays crunchy!

⭐ Tips

  • Air-fried pita gives the best crunch with less oil.

  • Add extra sumac for stronger flavor.
