Crispy Chicken Salad
Ingredients:
For the Chicken:
2 boneless chicken breasts, sliced
1 cup breadcrumbs or panko
1/2 cup all-purpose flour
1 egg, beaten
Salt & pepper to taste
1/2 tsp paprika
1/2 tsp garlic powder
Oil for frying or air frying
For the Salad:
2 cups romaine lettuce, chopped
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/2 cucumber, sliced
1 avocado, diced
Dressing (Optional Honey Mustard):
2 tbsp Dijon mustard
2 tbsp honey
1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper to taste

Instructions:
1. Prepare Chicken:
Season chicken with salt, pepper, paprika, and garlic powder.
Dredge each piece in flour, dip into beaten egg, then coat with breadcrumbs.
Fry in oil until golden and cooked through or air fry at 400°F (200°C) for 15 minutes.
2. Make Salad:
In a large bowl, combine lettuce, tomatoes, onion, cucumber, and avocado.
3. Assemble:
Place crispy chicken strips on top of the salad.
Drizzle with dressing and serve immediately
