We always have feta at home—the kind soaked in olive oil—and it’s the perfect star ingredient for this exciting twist on classic avocado toast. Creamy, tangy, sweet, and crunchy all in one bite!



Ingredients

2 ripe avocados – halved and pitted

2–4 slices sourdough bread – toasted

1 cup cherry tomatoes – halved

½ cup feta cheese

¼ cup dried cranberries – chopped

¼ cup walnuts – chopped

1–2 tsp lemon juice

Salt & pepper – to taste

Fresh herbs (optional: parsley or basil)



Instructions

1. Prepare the Avocado
Scoop the avocado into a bowl and mash (or slice, if you prefer). Add lemon juice, salt, and pepper.

2. Toast the Bread
Toast sourdough slices until golden and crisp.

3. Assemble
Spread the avocado over each slice, then layer on cherry tomatoes. Sprinkle with crumbled feta, chopped cranberries, and walnuts.

4. Finish & Serve
Season with a little extra salt and pepper, garnish with herbs, and enjoy right away.
