📝 Ingredients
🧁 For the Cake
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 (8 oz) can crushed pineapple, drained
- (Save 2 tbsp juice for frosting)
🍍 For the Pineapple Frosting
- ¼ cup unsalted butter, softened
- 2 cups powdered sugar
- 1–2 tbsp crushed pineapple juice (reserved)
- ½ tsp vanilla extract
✨ Optional Garnish
- Fresh pineapple chunks
- Maraschino cherries
👩🍳 Instructions
🔥 Step 1: Preheat & Prepare
- Preheat oven to 350°F (175°C)
- Grease & flour:
- Two 8-inch round pans, or
- One 9×13-inch pan
🥣 Step 2: Mix Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
Set aside.
🧈 Step 3: Cream Butter & Sugar
In a large bowl:
- Beat butter & sugar until light and fluffy (2–3 minutes).
🥚 Step 4: Add Eggs & Vanilla
- Add eggs one at a time, mixing well.
- Stir in vanilla extract.
🔄 Step 5: Combine Wet & Dry
- Add dry ingredients in three parts, alternating with small amounts of pineapple.
- Mix until just combined — don’t overmix.
🍍 Step 6: Fold in Pineapple
- Gently fold in drained crushed pineapple until evenly mixed.
🔥 Step 7: Bake
- Divide batter into pans.
- Bake 25–30 minutes, until a toothpick comes out clean.
- Cool 10 minutes in pans, then transfer to a wire rack to cool completely.
🍨 Step 8: Make the Frosting
- Beat butter until creamy.
- Gradually add powdered sugar.
- Add pineapple juice & vanilla.
- Beat until smooth and fluffy.
🎂 Step 9: Frost & Decorate
- Frost completely cooled cake.
