๐ Mediterranean Shakshuka (Eggs Poached in Spiced Tomato Sauce)

For the Tomato Base
2 tbsp olive oil
1 medium onion, diced
1 red bell pepper, diced
3โ4 cloves garlic, minced
4 medium tomatoes, chopped (or 1 can crushed tomatoes)
1 tbsp tomato paste
1 tsp paprika
1 tsp cumin
1/2 tsp chili flakes (optional)
1/2 tsp black pepper
1 tsp salt (adjust to taste)
Optional: 1/2 tsp smoked paprika for deeper flavor
For the Eggs
4โ6 eggs
Fresh parsley or cilantro (for garnish)
Optional: feta cheese
๐จโ๐ณ Step-by-Step Instructions
1. Sautรฉ the Aromatics
Heat olive oil in a pan.
Add diced onions and sautรฉ until soft.
Add bell peppers and cook for 3โ4 minutes.
Add minced garlic and cook another minute.
2. Build the Tomato Sauce
Add:
chopped tomatoes
tomato paste
paprika
cumin
chili flakes
salt & pepper
Stir well and cook for 10โ12 minutes, until tomatoes break down and sauce thickens.
3. Create Wells & Add Eggs
Make small wells in the sauce.
Crack 1 egg into each well.
Reduce heat to low and cover the pan.
Cook until:
Runny eggs: 6โ7 minutes
Fully cooked yolks: 8โ10 minutes
4. Garnish & Serve
Top with:
Fresh parsley or cilantro
Optional: crumbled feta
Drizzle of olive oil
